Rainbow Sprinkle Pancakes
Bright, colorful, and guaranteed to make anyone smile. These rainbow sprinkle pancakes are perfect for birthdays, celebrations, or just a fun weekend breakfast.

Ingredients
  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ¼ cups milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • ¼ cup rainbow sprinkles (plus extra for topping)

Instructions:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk milk, egg, butter, and vanilla. Combine wet and dry ingredients until just mixed (don’t overmix). Gently fold in sprinkles. Cook on a greased skillet over medium heat, 2–3 minutes per side. Top with whipped cream and more sprinkles for extra fun.

Banana Pancake Bites
Tiny, fluffy, and just the right amount of silly! These Banana Pancake Bites make breakfast exciting for little hands and big appetites. We love watching kids stack, dip, and snack on these bite-sized pancakes that taste just like banana bread meets Sunday morning pancakes!

Ingredients:
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • 1 egg
  • 1 ripe banana, mashed
  • 1 tbsp melted butter or oil
  • ½ tsp vanilla extract

Instructions: Whisk together flour, sugar, baking powder, and salt in a bowl. In another bowl, mix milk, egg, mashed banana, butter, and vanilla. Combine wet and dry ingredients until just smooth. Pour small spoonfuls of batter onto a greased skillet about 2 inches wide. Cook 1–2 minutes per side until golden. Stack 2–3 mini pancakes with banana slices between each, secure with a toothpick, and serve with syrup for dipping!

S'mores Pancakes
We know a good dessert for breakfast when we see one! These pancakes are layered with marshmallows, graham crackers, and chocolate drizzle for a super fun and delicious breakfast treat! This recipe also works great with our OG original pancakes recipe

Ingredients
  • 1 ½ cups all-purpose flour
  • ¼ cup cocoa powder
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract

For the Filling & Topping:
  • 1 cup mini marshmallows (or marshmallow fluff)
  • ½ cup crushed graham crackers
  • ½ cup chocolate chips or chocolate sauce
  • Whipped cream (optional)

Instructions:
In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, whisk milk, egg, butter, and vanilla.
Stir wet into dry until just combined (don’t overmix). Cook pancakes on a greased skillet over medium heat, 2–3 minutes per side, until fluffy.
Assemble the stack:
Layer pancakes with mini marshmallows (or spread of fluff) and chocolate sauce.
Sprinkle crushed graham crackers between layers. Top the stack with whipped cream, extra marshmallows, graham cracker crumbs, and a drizzle of chocolate sauce.

Say what, pancake tacos?! These breakfast pancake "tacos" let you fold your pancakes with fun sweet or savory fillings for a playful, customizable morning treat. We love blending breakfast + taco vibes for something totally unexpected.

Ingredients:
  • 1 cup pancake batter (works great with our OG classic recipe)
  • ½ cup cream cheese, softened
  • 1 tbsp honey or maple syrup
  • Mixed berries (strawberries, blueberries)
  • Sliced bananas
  • A pinch of cinnamon
  • Butter / oil for cooking

Variations / Serving Ideas:
  • Savory high protein version: scrambled eggs + cheese + avocado
  • Nut butter + jam version
  • Get fancy and try a garnish: mint, chocolate drizzle, citrus zest

Instructions: Make small pancakes (approx 3–4 inch diameter) using your regular pancake batter. While pancakes are cooking, mix cream cheese + honey (or syrup) until smooth. Lay pancake flat, spread cream cheese mixture, then add berries + banana slices, sprinkle cinnamon. Fold pancake like a taco (or roll it). Serve immediately, perhaps dusted with powdered sugar or drizzle extra syrup.
