Banana Oat Pancakes
These wholesome and naturally sweet oat pancakes make the perfect healthy breakfast that still feels indulgent.

Ingredients
  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 ripe banana, mashed
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt

Instructions:
Blend oats into flour using a blender or food processor. In a bowl, mash banana and whisk in milk, egg, and vanilla. Stir in oat flour, baking powder, cinnamon, and salt until smooth. Heat a skillet over medium heat and lightly grease. Pour ¼ cup of batter for each pancake. Cook until bubbles form, flip, and cook until golden brown. Serve with sliced bananas, nut butter, or honey.
Cottage Cheese Protein Pancakes
High-protein, super easy, and surprisingly delicious. These taste like Saturday morning but work like Monday fuel.

Ingredients
  • 1 cup cottage cheese
  • 3 eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions:
Add all ingredients to a blender and blend until smooth. Let the batter sit for 5 minutes to thicken slightly. Heat a nonstick skillet over medium heat with a little oil or butter. Pour batter into small pancakes and cook 2–3 minutes per side, until golden.
