Ingredients
1 cup cottage cheese
3 eggs
½ cup rolled oats
½ teaspoon baking powder
½ teaspoon vanilla extract
Pinch of salt
Butter or oil for cooking
Instructions: Add all ingredients to a blender and blend until smooth. Let the batter sit for 5 minutes to thicken slightly. Heat a nonstick skillet over medium heat with a little oil or butter. Pour batter into small pancakes and cook 2–3 minutes per side, until golden.
