Savory Pancakes You’ll Love for Dinner or Brunch

Pancake Tacos (AKA the breakfast tacos you didn't know you needed)
Say what, pancake tacos?! These breakfast pancake "tacos" let you fold your pancakes with fun sweet or savory fillings for a playful, customizable morning treat. We love blending breakfast + taco vibes for something totally unexpected.

Ingredients:
  • 1 cup all-purpose flour
  • 1 tbsp cornmeal (optional- adds that taco-like texture)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp garlic powder
  • ½ tsp smoked paprika (or chili powder for more kick)
  • ¾ cup buttermilk (or milk + 1 tsp vinegar)
  • 1 egg
  • 1 tbsp melted butter or oil
  • 2 tbsp finely chopped scallions or chives (optional but adds nice savory aroma)
  • 1 lb ground beef (or turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or your own blend: chili powder, cumin, paprika, oregano, salt)
  • ½ cup water


Toppings: shredded cheddar, diced tomatoes, lettuce, avocado, jalapeños, sour cream, salsa

Instructions:
Make the pancakes: Whisk dry ingredients together. Add wet ingredients and stir until just combined, batter should be pourable but thick. Cook on a lightly oiled griddle or pan until golden on both sides. Keep pancakes slightly thinner if you’ll fold them like tacos.

Make the meat: Brown beef with onion and garlic. Stir in taco seasoning + water; simmer until thickened. Spoon into folded savory pancakes and top as desired.
